Ivan Muzira Mukisa is an accomplished Food Microbiologist/Scientist and currently serves as an Associate Professor and Head of Department of Food Technology and Nutrition at Makerere University.
He holds a PhD in Food Microbiology from the Norwegian University of Life Sciences (2012), an MSc in Food Science and Technology from Ghent University and Katholiek University of Leuven, Belgium (2005), and a BSc in Food Science and Technology from Makerere University (2002).
Since joining Makerere University in 2004, Ivan has been actively engaged in both teaching and research.
His research interests span a wide range, including the development of novel nutrient-dense and acceptable food products using locally available raw materials, evaluation of the acceptability and stability of probiotic foods, assessment of potential beneficial health effects of foods, improvement of traditional fermentations and processing technologies, and enhancement of the processing, safety, and stability of local foods and beverages.
Over the past decade, Ivan has published over fifty papers in international peer-reviewed journals and has successfully supervised more than thirty graduate students.
He has also been an integral part of various committees, including two Codex Electronic Working Groups and three standards development committees of the Uganda National Bureau of Standards.
