Dr. Stellah Byakika (PhD., MSc., BSc., (Mak) 

Food Scientist (Food Microbiology/ Food Safety)

Dr. Stellah Byakika is a Lecturer in the Department of Food Technology & Nutrition, Makerere University, Kampala. She has a PhD (2020), MSc. (2016) and BSc. (2011) all in Food Science and Technology from Makerere University.

Her research experience spans over ten years with a bias in food microbiology and food safety. She has done a lot of work on the use of probiotics and defined started cultures in fermented foods. She is currently pioneering the research into the development of defined started cultures for selected traditional dairy products in Uganda with the aim of improving their quality (safety) and commercialization.

Dr. Byakika has experience as a Principal Investigator and research team member on different research projects. This has been through cooperation with partners such as Wageningen University, the Carnegie Corporation of New York, International Foundation for Science (IFS) and UK BBSRC-GCRF-IBBEDW Biotechnology and Biological Sciences Research Council (BBSRC), United Kingdom among others. Of recent, she is a recipient of the prestigious Consolidating Early Career Academics Programme (CECAP) grant (2022-2024). Additionally, she is the deputy country facilitator of the Foresight for Food Systems Transformation (FoSTr) Programme in Uganda.

Currently, Dr. Byakika coordinates the BSc. Food Science and Technology (BFST) program, that is, student internships, recess term activities, research, and curriculum review among others.
